Vegetarian Burger

Prep time: 15 min | Cook time: 6 min | Serves 4

INGREDIENTS
225g  sliced pineapple
225g sliced beetroot
2 ripe tomatoes, finely chopped
1/2 small red onion, finely chopped
2 tbsp chopped coriander
2 tsp red wine vinegar
2 tbsp olive oil
1 garlic clove, crushed
4 large flat mushrooms,
stems trimmed
4 butter lettuce leaves, washed
125g (1/2 cup) hummus
4 grainy bread rolls, split and toasted

METHOD

  1. Combine tomato, onion, coriander and red wine vinegar. Season to taste and set aside. Combine olive oil and garlic. Brush over bothsides of the mushrooms. Cook on a barbecue or char grill over medium-high heat for 3 minutes each side.
  2. Assemble burgers with hummus, lettuce, mushrooms, tomato salsa, beetroot, pineapple and a grainy bread roll. Serve immediately.
