INGREDIENTS
225g sliced pineapple
225g sliced beetroot
2 ripe tomatoes, finely chopped
1/2 small red onion, finely chopped
2 tbsp chopped coriander
2 tsp red wine vinegar
2 tbsp olive oil
1 garlic clove, crushed
4 large flat mushrooms,
stems trimmed
4 butter lettuce leaves, washed
125g (1/2 cup) hummus
4 grainy bread rolls, split and toasted
METHOD
- Combine tomato, onion, coriander and red wine vinegar. Season to taste and set aside. Combine olive oil and garlic. Brush over bothsides of the mushrooms. Cook on a barbecue or char grill over medium-high heat for 3 minutes each side.
- Assemble burgers with hummus, lettuce, mushrooms, tomato salsa, beetroot, pineapple and a grainy bread roll. Serve immediately.
